Hey, y'all! Today I'm gonna share with y'all one of my favorite recipes of all time - Bubur Kacang Hijau.
Ingredients:
- 1 cup of mung beans
- 5 cups of water
- 1/2 cup of palm sugar
- 1 pandan leaf (tied into a knot)
- 1/2 tsp of salt
- 1 cup of coconut milk
Instructions:
1. Rinse and soak the mung beans in water for at least an hour.
2. Drain the water from the mung beans, and place them into a pot with 5 cups of water and pandan leaf.
3. Bring the pot to a boil over medium heat.
4. Once boiling, lower the heat and let it simmer for about 30 minutes, or until the mung beans are soft and mushy.
5. Stir in the palm sugar and salt, and let it simmer for another 10 minutes.
6. Add in the coconut milk, stir well and let it simmer for another 5 minutes.
7. Once done, let it cool down a little bit before serving.
