  • 1 tbsp of curry powder
  • 1/2 tsp of turmeric
  • 1 cup of coconut milk
  • 1 cup of water
  • 1 tsp of salt
  • 1 tsp of sugar

Instructions:

1. Heat the oil in a large pan over medium-high heat. Add chopped onions, smashed lemongrass, minced garlic and grated ginger, and cook for a few minutes until the onions are softened and the mixture is fragrant.

2. Add the curry powder and turmeric, and cook for another minute, stirring continuously.

3. Add the ikan tenggiri cubes and cook for a few minutes until they are browned on all sides.

4. Pour in the coconut milk and water, then add the salt and sugar. Stir everything together.

5. Reduce the heat to medium-low and let the dish simmer for about 15-20 minutes, stirring occasionally, until the ikan tenggiri is cooked through and tender.

6. Serve the Ikan Tenggiri Masak Kari with steamed rice and garnish with some chopped cilantro or scallions for extra flavor.
